Easy Nacho Recipe
For an amazing midnight snack or appetizer on-the-fly, nachos are the way to go! Transform leftovers into micro-fun! Make these Easy Nachos your Nacho Resolution!

Ingredients for Easy Nachos:
leftover meats such as chicken or steak (about 1/2 cup)
leftover veggies such as onion or bell pepper
tortilla chips (about 2 hand fulls)
shredded cheese, about 1-1/2 cups (such as cheddar or Monterey Jack)
1 green onion, diced
1 small tomato, seeded & diced
1-2 tsp fire roasted jalapenos
black olives (if desired)

NOTES: Makes enough for 2 really hungry people or 4 less hungry people that are using your cutest cocktail napkins.

DIRECTIONS:

Easy Nacho Recipe
Cover a big, microwave safe plate with a single layer of tortilla chips.

Easy Nacho Recipe
Add a layer of shredded cheese; a layer of chicken or steak (if desired). Add some onions and bell peppers, perhaps? Top with another layer of cheese. Add a blast of fire roasted jalapenos. Microwave until desired meltiness. Yes, when describing Easy Nachos, meltiness is most certainly a word.

Easy Nacho Recipe
Garnish with tomatoes, green onions (and black olives, if desired) and serve with guacamole and sour cream. For Easy Nachos, I like a simple guacamole of mashed avocado, salt, pepper and a squeeze of lime.

    That’s the way we make em and they are great. You can make them without the meat and also add black olives.
