Easy Nachos (recipe)

nacho_angle
For an amazing midnight snack or appetizer on-the-fly, nachos are the way to go! Average Betty transforms leftovers into micro-fun! Make these Nachos your Nacho Resolution!

Ingredients for Nachos:
nacho_ingedients
leftover meats such as chicken or steak (about 1/2 cup)
leftover veggies such as onion or bell pepper
tortilla chips (about 2 hand fulls)
shredded cheese, about 11⁄2 cups (such as cheddar or Monterey Jack)
1 green onion, diced
1 small tomato, seeded & diced
1-2 tsp fire roasted jalapenos
black olives (if desired)

Get creative!

nacho_leftover
Find some leftover meats and veggies in your fridge.

nachos_bag
Grab a couple handfuls of tortilla chips.

nachos_chips
Cover a big, microwave safe plate with tortilla chips.

nacho_cheese
Add a layer of shredded cheese.

nacho_chicken
A layer of chicken or steak (if desired).

nacho_onion_pep
Some onions and bell peppers, perhaps?

nacho_more_cheese
Top with another layer of cheese.

nacho_jals
Add a blast of fire roasted jalapenos.

nacho_micro
Microwave until desired meltiness. Yes, when describing Nachos, meltiness is most certainly a word.

nacho_melted
Mmmm. Before you did in…

nacho_tomato
Garnish with tomatoes, green onions (and black olives, if desired) and serve with guacamole and sour cream. For Nachos, Betty likes a simple guacamole of mashed avocado, salt, pepper and a squeeze of lime.

nacho_high
Makes enough for 2 really hungry people or 4 less hungry people that are using your cutest cocktail napkins.

    That’s the way we make em and they are great. You can make them without the meat and also add black olives.
