Ode to Joy the Baker. Yeah, she’s never heard that before…
As if by recipe destiny, my pink and cuddly copy of the Joy the Baker Cookbook seemed to open all by itself to Peanut Butter Birthday Cake. And I knew right away I would make this Peanut Butter Birthday Cake.
Referring to Peanut Butter Birthday Cake, as birthday cake is celebratory enough, but Peanut Butter Birthday Cake is really a celebration of peanut butter. And birthday cake.
There’s no chocolate; no grape jelly. Just peanut butter.
Nothing to distract from two layers of creamy peanut butter frosting and moist, airy peanut-buttery cake.
And not only is Peanut Butter Birthday Cake really fun to say… my actual birthday is in December. So indulging in a slice of Birthday Cake in May just seems naughty.

That looks so delicous.
And without any chocolate, it seems to be not too heavy.
One question about the parchment paper.
I have never seen any formed like them, but I like the form and that they fit so well into round forms.
Did you cut them by yourself or can I buy them anywhere?
Thanks, Jan! It’s not too heavy. Joy’s recipe is spot-on.
I did cut the parchment paper – cut a square bigger than your pan, trace around the pan leaving “tabs” at each corner. It takes an extra moment but it’s worth it to me when my cake pops right out. Hope this helps :)
Joys book is awesome, I was lucky enough to review it before it was published and I’ve made a lot from it with great results every time…
OMG, you’re amazing. And so is this recipe.
Thanks, AG!!
i love the parchment “handles!” i’ve never done that and therefor always have to invert the cake. you are brilliant! :-)
Oh you! This coming from a woman who made taquitos rolled with potato wafers?!? I find it hard to believe there is anything you haven’t done… in the kitchen that is!
