MMMMeatless! I love TACO PARTIES because taco fillings and toppings are endless and everyone gets what they want. I used to provide extra beans and rice for my vegetarian friends but then I made Tacos de Papa — or Potato Tacos and even my carnivorous friends go crazy for their punchy, crunchy flavor.

You rock Average Betty!! These tacos sound so cool! I never would have thought about putting the potato mixture in the soft tortilla and then frying. Totally makes sense though! This recipe definitely takes the cake… err.. uhh.. TACO!
