The Average Betty Test Kitchen was challenged by I Can’t Believe It’s Not Butter! to make a favorite holiday recipe, replacing butter with ICBINB. I immediately thought, I Can’t Believe It’s Not Buttercream! Buttercream Frosting is a great test for a product that promises to “add fresh, buttery flavor to the foods you love, while reducing saturated fat compared to butter.” Many, many cupcakes later, the AB Test Kitchen proudly presents I Can’t Believe It’s Not Buttercream Snowball Cupcakes!

Ingredients for Snowball Cupcakes:
1/2 cup I Can’t Believe It’s Not Butter!
1/2 cup white granulated sugar
1/2 cup light brown sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 large eggs
1 1/2 cups flour
2 tsp vanilla
3/4 cup buttermilk
sweetened shredded coconut or sprinkles for decorating
Ingredients for I Can’t Believe It’s Not ButterCream!:
1/2 cup I Can’t Believe It’s Not Butter!
2 1/2 cups confectioners’ sugar
1/2 tsp vanilla extract
2 tbsp whipping cream
PREPARATION:
Preheat oven to 350(F). In an electric mixer, cream I Can’t Believe It’s Not Butter! thoroughly. Add white and brown sugars and cream again. Mix in baking powder, baking soda and salt. Add eggs and cream thoroughly. Add flour and combine thoroughly. Scrape down sides of mixing bowl. With mixer running on low speed, stream buttermilk into mixing bowl.
When all of the buttermilk is incorporated, crank the speed to whip air into the batter. Add vanilla. Notice how fluffy and soft the batter looks? Fluffy is good.
Spoon batter into paper lined muffin cups. This recipe makes 12 large or 16 medium cupcakes, depending on amount of batter in each cup. Bake at 350(F) for 20-22 minutes. Cupcakes will be golden and puffed. Allow to cool in pan for 10 minutes.
Before frosting, allow cupcakes to rest on rack until completely cool!
I CAN’T BELIEVE IT’S NOT BUTTERCREAM!
Cream I Can’t Believe It’s Not Butter! thoroughly and add powdered sugar one half cup at a time until incorporated. Add cold whipping cream one tablespoon at a time with mixer running on low speed. When incorporated, turn the mixer to high to beat air into the mixture and whip the cream. Frosting will be thick, silky and delicious.
SNOWBALL FIGHT!
Spread I Can’t Believe It’s Not Buttercream! over cupcakes and top with shredded coconut and other confections. For best results, eat. Do not throw.

Why do you use brown sugar and white sugar?
I have always wondered what the different really was. I usually use brown sugar, but I don’t even know why. Taste difference I guess?

I had no idea you could cook with I Can’t Believe It’s Not Butter! I was especially impressed with the “Not ButterCream” icing I didn’t think it would be as white as it turned out. This post made me inspired to make some cupcakes with my boys!!

Do you think there could be a substitute for the whipping cream in the icing? I have a niece who has a dairy allergy. I wonder if soy or rice milk would work? I guess I’ll have to try.

Congratulations on winning the I Can’t Believe It’s Not Butter Bake-Off! Your cupcakes looked so good. I didn’t get to try them, so I’m going to bake them this week. In looking at the photos, I can see that the ones in the test kitchen did rise up a little higher. Guess that was a good thing ;).
can i add milk for the frosting exept whipping cream sry i am asking u 2 many ?S
Yes, but don’t add as much milk. It will not whip up like whipping cream and your frosting will be runny.
