Don’t you love Spring? The days are warm, the nights are cool, and the farmer’s market is overflowing with colorful Spring vegetables.
I’ve been known to throw all kinds of vegetables on the grill. I love the smokey, caramelized sweetness and ease of preparation that comes from grilling. Try these Sesame Ginger Grilled Carrots as a twist next time you fire up the grill.

Ingredients for Sesame Ginger Grilled Carrots:
3-4 medium carrots
3 TBSP Sesame Ginger Dressing
1 teaspoon toasted sesame seeds
1 teaspoon chopped green onion
NOTES:
Each carrot is about one serving. Serves 3-4. If you can, select organic carrots.
DIRECTIONS:
1) Peel carrots and cut off top and tip.
2) Cut carrots into quarters, lengthwise.
3) Marinate carrots in Sesame Ginger Dressing, about 30 minutes.
4) Place carrots on medium-high grill, flipping occasionally.
5) Brush carrots with additional Sesame Ginger Dressing for added flavor.
6) Grill carrots for 10 minutes, or until desired tenderness.
7) Drizzle with Sesame Ginger Dressing and garnish with toasted sesame seeds and chopped green onion.
8) Share and enjoy.
