The Perfect Shrimp is one perfect bite of crunchy, cucumber and spicy, grilled shrimp, topped with Sriracha hot sauce, creamy avocado and toasted sesame seeds.
The flavors come together like a California Roll in your mouth. And the first time I served this to my friends at a holiday party they proclaimed it, “The Perfect Shrimp” and it stuck.

Ingredients for The Perfect Shrimp:
12 raw shrimp
12 cucumber slices
12 avocado slices
Sriracha Hot Sauce
toasted sesame seeds
lemon wedges
1/2 TBSP butter
The Perfect Shrimp Seasoning Suggestion:
olive oil
soy sauce
cayenne pepper
dried parsley
garlic powder
Directions for The Perfect Shrimp:
1. Clean, devein and remove tails from raw shrimp.
2. Pour just enough extra virgin olive oil on shrimp to coat. Season shrimp with garlic powder, cayenne pepper, dried parsley and soy sauce. Set aside.
3. Stripeel a Persian or English cucumber. (Stripeel as in stripe-peel.) Cut the same number of cucumber slices as shrimp.
4. Peel avocado. Cut the same number of avocado slices as cucumber and shrimp. Set aside.
5. Grill seasoned shrimp on hot grill or skillet about 2 minutes a side. Toss grilled shrimps with a small amount of butter (if desired) and generous squeeze of lemon.
6. Arrange cucumber slices on a serving plate. Place one shrimp per cucumber slice. Squeeze Sriracha on top of shrimp. Top with avocado slice and a sprinkle of sesame seeds.
Make 2-3 per person and serve as an appetizer. Make 4-6 per person and serve as an entree.
