KLONDIKE ROSE MASHED POTATOES
Ingredients for Klondike Rose Mashed Potatoes:
3 pounds Klondike Rose Potatoes (cut into quarters)
5 cloves of garlic
5 cups of chicken broth
4 TBSP butter
salt and pepper to taste
Directions for Klondike Rose Mashed Potatoes:
1. In a small to medium pot over a medium high flame add potatoes, garlic cloves, and chicken broth. The broth should come about a 1/2 inch higher than the potatoes.
2. Allow the broth to boil, then cover with a lid and boil for 15 to 20 minutes or until fork tender.
3. Once the potatoes are fork tender, drain most of the liquid out, leaving about 1/2 a cup in the pot.
4. Add salt, pepper, and butter to potatoes and garlic cloves.
5. Mash mixture with a potato masher until desired consistency is reached.
BUTTERMILK RUSSET MASHED POTATOES
Ingredients for Buttermilk Mashed Potatoes:
3 pounds Russet Potatoes (peeled and cut into halves, lengthwise)
3 TBSP butter
1/2 – 3/4 cup buttermilk
salt to taste
Directions for Buttermilk Mashed Potatoes:
1. In a medium pot, cover peeled, halved potatoes with water and add 1 teaspoon salt.
2. Over medium-high heat, bring to a boil.
3. Reduce heat to low, cover and simmer 20 minutes, or until tender.
4. Drain the water from potatoes and return to same warm pot.
5. With a potato masher, break up the potatoes, 1-2 times around the pot.
6. Add butter and incorporate gently.
7. Add buttermilk and continue mashing, taking caution not to over mix.
8. Season to taste with salt (and pepper if desired).
LOADED KLONDIKE GOLD DUST MASHED POTATOES
Ingredients for Klondike Gold Dust Loaded Mashed Potatoes:
3 pounds Klondike Gold Dust Potatoes (peeled or unpeeled to your preference, cut into quarters)
3 TBSP butter
1/4 cup sour cream
1/4 – 1/2 cup milk or cream
1/4 cup shredded sharp cheddar cheese
1/4 cup bacon bits
2 TBSP chopped green onion
salt and pepper to taste
Directions for Klondike Gold Dust Loaded Mashed Potatoes:
1. In a medium pot, cover quartered potatoes with water and add 1 teaspoon salt.
2. Over medium-high heat, bring to a boil.
3. Reduce heat to low, cover and simmer 20 minutes, or until tender.
4. Drain the water from potatoes and return to same warm pot.
5. With a potato masher, break up the potatoes, 1-2 times around the pot.
6. Add butter and incorporate gently.
7. Add sour cream and milk incorporate gently, taking caution not to over mix.
8. Add the remaining toppings, salt and pepper to taste and mix a final time.
