Ingredients for Mashed Potato Pizza:
Garlic Mashed Potatoes
Pizza Dough (Original, Whole Wheat or White Whole Wheat)
Assorted Toppings, amounts vary. Suggestions follow.
Ingredients for Mushroom & Ham Mashed Potato Pizza:
Mushrooms (sliced, marinated in balsamic vinegar)
Red onion, sliced
Red bell pepper, sliced
Country Ham
Mozzarella Cheese
Cheddar Cheese
Italian herbs
Egg
Ingredients for Huevos Rancheros Mashed Potato Pizza:
Mashed Potatoes
Bacon (or shredded carnitas or carne asada)
Jalapeno
Diced Tomato
Onion
Salsa
Pepper Jack Cheese
Cilantro
Egg
Notes: If you are particular about your eggs, you can cook (fry, poach, scramble) the egg separately. For individual pizzas as seen in the video, use about 3.5 ounces of dough for each pizza. Watch the How to Make Mashed Potato Pizza Video for added instruction and entertainment.
Directions:
1) Roll out pizza dough and poke with a fork.
2) Spread a layer of mashed potatoes on pizza dough.
3) Continue to top as desired, leaving a “divet” in the toppings for the egg.
4) Bake in a preheated 500(F) oven for 8 minutes, or until crust is crisp and egg is cooked to your liking.
5) Share and enjoy.
