Inside Out Shepherd’s Pie?
It’s the surprise egg of meatballs!
Spiced, ground, American lamb wrapped around a golden, crisp Idaho potato tot, finished with a habanero Guinness glaze.

Ingredients for Inside Out Shepherd’s Pie:
8 frozen Potato Tots (or make your own Idaho Potato Tots)
1 package Shepherd’s Pride or Cedar Springs Ground American Lamb Shoulder Chop, about 14 ounces
For the Lamb Seasoning:
1 teaspoon chili powder
1 teaspoon cumin
1/2 teaspoon garlic powder
1/2 teaspoon turmeric
1/3 cup panko bread crumbs
1 egg
coarse salt & black pepper
For the Habanero Guinness Glaze:
16 ounces Guinness Beer
1 1/2 cups brown sugar
1 habanero chili
NOTES:
Makes 8 meatballs and about 1 1/2 cups sauce. For added instruction, entertainment watch the video!
Directions for Inside Out Shepherd’s Pie:
1) Bake or make the Potato Tots.
2) Season the Lamb. In a bowl combine spices, panko bread crumbs and egg with the ground lamb. Refrigerate until ready to use.
3) Make the Habanero Guinness Glaze. Please take extra care to not let this mixture boil over. In a saucepan over medium heat, bring the beer, brown sugar and habanero to a bubbling. Reduce the heat and continue cooking and stirring until mixture has reduced by about a half. Remove from heat. Mixture will thicken as it cools.
4) Prepare the meatballs. Section seasoned lamb into 8 pieces. Form meatball around Potato Tot. Place meatballs in a baking dish a bake in a preheated 425(F) oven for 20 minutes.
5) Serve and enjoy! For the spice lovers, serve meatballs in the glaze. For the more timid, drizzle sauce over meatballs.
