April 12th is National Grilled Cheese Sandwich Day. In fact, the entire month of April is National Grilled Cheese Month. Needless to say, there had to be a little celebrating around here.
In honor of this day devoted to bread and melting cheese, we griddled up The Big Cheese (above), medium cheddar, mozzarella, whole wheat, salted butter, non-stick pan.

My favorite grilled cheese is made with Double Gloucester and a thin slice of Vidalia onion.

I love it. No frills, just the grilled cheese sandwich that made us happy when we were kids. This takes me waaaay back.
