I don’t consider myself the Official Unofficial Authority on In-N-Out Burgers for nothing. I do it for the melting cheese and caramelized onions. I do it for the spicy peppers. I do it because I’ve seen too many great people with good taste fail at their first In-N-Out order.

The reason people fail at their first In-N-Out is simple. They are inexperienced. But it’s not their fault. They’ve been lured by the hype and haven’t been given order recommendations from the hypers. The first-timers get lost in the absurdly simple menu board situated next to the pale neon sign that reads, “Quality you can taste,” in schoolroom perfect cursive letters. They haven’t been told about the Secret Menu.
When an experienced Official Unofficial Authority on In-N-Out Burgers accompanies a first-timer, the results are Double Double Rainbow delicious. When a first-timer goes it alone and orders with no supervision, the outcome is predictably a “miss,” as described by YouTube mega-chef Rob Nixon, on his Facebook page (above).
I knew right away I had an Official Unofficial job to do.
Rob Nixon, host of the popular YouTube channel, Nicko’s Kitchen, was visiting from Perth, Australia over the holidays. I was lucky enough to meet him at the Tastemade Launch Party and set up a collaboration video at the killer, new Tastemade Studios. When I saw his misguided In-N-Out experience, I knew we’d be makin’ burgers.

Building the perfect In-N-Out Burger at home isn’t just an art, it’s a science. And fortunately, mad-burger-scientist Kenji López stranded in Harlem, New York with no access to In-N-Out figured out how to make a Double Double that is beyond convincing. In an unintended but very appropriate tribute, we filmed the drool-worthy results on the “Brooklyn” set at Tastemade Studios.
