As a lover of potatoes and cheese the only thing I would add is… more cheese. Maybe a little more Asiago, but surely I’d add some grated parmesan on the very top with the Panko bread crumbs. This cheese addition probably is due to my career at two pizza chains, testing pizza nearly every day. Going to try the recipe soon. Thanks for the wonderful combination… cranberries and potatoes.
LOL, Don! More cheese! No matter the reasoning, more cheese is always a bonus. When I reheated the leftovers, I added a little mozzarella for extra cheesy goodness. Let me know what you think if you give it a try… Happy Thanksgiving!
