What’s cookin’ at my house….. well in honor of your motto “Work With What Ya’ Got” I wanted to share a treat my Dad created in the early 80’s (after a visit to his Oncologist) and an attempt to “create good & healthy” from what we had in the house that night.
Cut up a bunch of red onions, tomatoes, zuchinni (green or yellow or BOTH), cheddar cheese crutons, and grated cheese (he used cheddar). Spray a oblong casserole dish w/ Pam (or a like substance) and layer zuchinni, tomatoes, onions, croutons and cheese in equal parts for at least two layers. Bake at 350 to 400 for about 30 mins. The result is a delight that is sure to please !!! It’s quick it’s easy and it can be varied to suit many tastes !!! Share it with all as you like; but I’ve told you it in honor of my Dad; Gene Fete – “The Whistling Mailman of Kirkwood, Missouri” (he died in March of 1984 but he shared the concept w/ all he loved) And it can be made w/ less of the “bad stuff” and is still sure to please. TY for listening to my tale.

Thank you also for your kind words Sara O’ Donnell(thats a good Irish name). The folks at Redhedd.com have helped me a lot with the internet stuff,apparently I recently wrote a blog entitled”I do not know what a blog is” and the founder of this great site started helping me out. I would love to work on something and will happily (and proudly)share. My recent fave is combining Creole with comfort food(sort of Cajun/Italian), it is always a hit on my menues and the average person can do it. It is very old shool in the Restaurant industry,but when attracting the masses with something that will impress guests and feed the kids… it works.
I have lots more to share if you are interested.

Average Betty, you rock!!!! Being a single guy, I gotta break the fast food habit. I’m learning it’s much cheaper to buy groceries than to constantly eat out. The only problem, I’m the only person who can tolerate my cooking.
So I hit the internet hoping to get some cooking tips, and that’s when I discovered you. Your videos are so awesome that I find myself watching them strictly for their entertainment value. I find myself forgetting to learn the cooking lesson, because your videos are so entertaining. Thank goodness you have everything jotted down at your website!

To answer your question, among my favorite foods are pasta and chicken. The challenge would be to lower the ol’ cholesterol hehe.

Pasta & chicken are some of my favorite foods, too. Especially when you put them together!
Cholesterol is a challenge… I find that the best strategy for me is to get plenty of exercise. And eat the things I love in moderation. But I’m certainly no expert ;)
