And these crowd-pleasing Super Easy Vegan Meatballs?

Sounds like Super Easy to me!
Ingredients for Super Easy Vegan Meatballs:
24 Klondike Gourmet Mini Potatoes
2 TBSP olive oil
1/2 TBSP cornmeal
curry powder (or other spice/herb blend) to taste
salt (& pepper) to taste
NOTES:

Directions for Super Easy Vegan Meatballs:
1) Clean and dry Klondike Gourmet Mini Potatoes.
2) Season with olive oil, curry powder or other spice/herb blend, cornmeal (and salt if seasoning blend does not already contain salt). Toss to coat with seasonings and oil.
3) Evenly distribute on a baking sheet and bake in a preheated 400(F) oven for 20-30 minutes, until golden, crisp and delicious.
4) Pierce each potato with a toothpick or skewer a couple. Best served warm, but can be served at room temperature too.
Experiment with different dipping sauces to coordinate with the flavor profile of the potatoes. If you go with the curry, here are a few Raita recipes you might like to try:
