Portobello Mushroom Burgers are a great vegetarian alternative when you want something meaty and filling but you don’t want the bloat that can come with a traditional bean patty. Customize to suite your tastes just as you would a regular cheeseburger.

Ingredients for EACH Portobello Mushroom Burger:
1 large Portobello Mushroom
1 TBSP balsamic vinegar
1 TBSP olive oil
pepper & salt to taste
2 “wheels” sliced onion
1/4 of a medium red bell pepper, sliced (or similar)
provolone cheese (or similar)
lettuce, tomato, or other toppings
Ingredients for Spread used in the Video:
3 TBSP mayonnaise
6 fresh basil leaves
1 TBSP fire-roasted red pepper
pepper & salt to taste
1 tsp fresh lemon (optional)
1/2 tsp finely minced fresh garlic (optional)
NOTES:

DIRECTIONS:
1) Make the spread: Combine all ingredients in a blender or food processor, or finely chop all ingredients and stir into mayonnaise. Set aside in the refrigerator until ready to use.
2) Marinate the portobellos: In a bowl, coat the mushrooms with balsamic vinegar, olive oil and fresh cracked pepper. Allow to marinate about 20 minutes.
3) On a preheated grill, grill pan or griddle, cook onions and peppers until desired tenderness and color.
4) Salt, then grill marinated portobellos 4-5 minutes on each side, also until desired tenderness.
5) Melt cheese on desired side of the mushroom. You may prefer to melt the cheese on the underside of the portobello (stem side up), I prefer to melt it on the domed side (stem side down).
6) Build the sandwich: Bottom bun, spread, fresh tomatoes, lettuce, grilled portobello, onions, peppers, top bun (with more spread, if desired).
7) Share and enjoy!
