You asked for it! Here’s my YouTube Next Chef Party Food recipe and I’m keeping the holiday after-party alive with a Foodwishes inspired White Bean Crostini. Ingredients for Garlic and White Bean Puree:
1-2 tbsp fresh parsley leaves
2 cans white beans, drained (15-16 oz cans)
2-4 cloves garlic
1-2 tbsp fresh lemon juice
2-3 tbsp extra virgin olive oil
salt & pepper to taste
Notes: Makes about 2 cups Garlic and White Bean Puree. Serve on crostini or with crackers, veggies or pita chips. Garnish with roasted pine nuts, pistachios, chopped sundried tomato or piquillo peppers. Although this is a quick and easy recipe, the flavors do taste even better the next day. If you do not have a blender or food processor, use a potato masher or fork.
Directions for Garlic and White Bean Puree:
1) In a blender, combine all ingredients until smooth (or desired consistency).
2) Serve on crostini or with pita chips and vegetables. Enjoy.
