Picnic season is here! When I want to pack a lunch that’s a little more special… a little sweet and spicy, I pack up Curried Chicken Salad Sandwiches. Ingredients for Curried Chicken Salad:
1 pound cooked, shredded chicken
1/3 cup mayonnaise
1/3 cup diced celery
1/4 cup chopped red onion
1/4 – 1/2 cup golden raisins, sliced grapes or chopped apples
1/4 – 1/2 cup chopped walnuts or slivered almonds (optional)
1 – 2 teaspoons curry powder
1 teaspoon rice vinegar
salt & pepper to taste
NOTES: Makes about 3 cups salad. Serves 3-4. Experiment with different fruits and nuts to change the flavor. For added creaminess, use more mayonnaise. For a lighter alternative, try Greek yogurt. Experiment with different breads, such as pita or whole grain. For a lower-carb variation, serve in lettuce cups. DIRECTIONS:
1) Combine all ingredients thoroughly.
2) Keep refrigerated until ready to serve.

I doubled the mayo and added slightly less than 1/3 cup fresh lemon juice. Insanely delicious!!! Thank you : )
