Picnic season is here! When I want to pack a lunch that’s a little more special… a little sweet and spicy, I pack up Curried Chicken Salad Sandwiches. Add-ins like fruit and nuts are only limited by your imagination. For added instruction and entertainment, watch the How to Make Curried Chicken Salad video.
Ingredients for Curried Chicken Salad:
1 pound cooked, shredded chicken
1/3 cup mayonnaise
1/3 cup diced celery
1/4 cup chopped red onion
1/4 – 1/2 cup golden raisins, sliced grapes or chopped apples
1/4 – 1/2 cup chopped walnuts or slivered almonds (optional)
1 – 2 teaspoons curry powder
1 teaspoon rice vinegar
salt & pepper to taste
NOTES: Makes about 3 cups salad. Serves 3-4. Experiment with different fruits and nuts to change the flavor. For added creaminess, use more mayonnaise. For a lighter alternative, try Greek yogurt. Experiment with different breads, such as pita or whole grain. For a lower-carb variation, serve in lettuce cups. For added instruction and entertainment, watch the How to Make Curried Chicken Salad video.
1) Combine all ingredients thoroughly.
2) Keep refrigerated until ready to serve.

I doubled the mayo and added slightly less than 1/3 cup fresh lemon juice. Insanely delicious!!! Thank you : )
