Aunt Kathi’s Carolina Coleslaw is a real crowd pleaser — especially because it has no mayonnaise.
Aunt Kathi’s Carolina Coleslaw is sweet and tangy with just a little bit of a bite.

Ingredients for Aunt Kathi’s Carolina Coleslaw:
16 oz bag coleslaw mix (washed and ready shredded cabbage and carrots)
1 large carrot, shredded
1 medium onion, quartered and thinly sliced (about 1 cup)
For the dressing:
1 cup apple cider vinegar
2/3 cup vegetable oil
1/2 cup sugar
1 teaspoon celery seed
1 teaspoon salt
1 TBSP Dijon mustard (or 1 teaspoon dry)
Directions for Aunt Kathi’s Carolina Coleslaw:
1. In a large jar with a tight fitting lid combine all ingredients to make the dressing. Shake well and set aside.
2. In a large bowl combine coleslaw mix, shredded carrot and thinly sliced red onion.
3. Toss with dressing, cover and chill until ready to serve.

This was delicious!!! I didn’t use the onion or carrot or all the dressing. I did use Truvia in place of the sugar. That is 2 tbsp plus 1 tsp for sugar.
