Ingredients for Buttermilk Scones:
2 cups all purpose flour
1/2 cup brown sugar
1 TBSP baking powder
1/2 teaspoon coarse salt
6 TBSP butter
2 large eggs
2 teaspoons pure vanilla extract
1/2 cup buttermilk
2 TBSP lemon zest
1 cup blueberries
2 TBSP buttermilk (for brushing tops)
1 teaspoon granulated sugar
Directions for Buttermilk Scones:
1) In a bowl combine flour, brown sugar, baking powder and salt. Add zest if using.
2) Cut in cold butter until mixture resembles coarse crumbs.
3) Make a well in the center and beat eggs with vanilla and buttermilk.
4) Stir wet ingredients into dry ingredients and gently fold in blueberries if using.
5) Pat out dough to about 1 inch thick on lightly floured surface and cut into 8 pieces.
6) Place scones on a baking sheet and brush with buttermilk and sprinkle with granulated sugar.
7) Bake in a preheated 375(F) oven for 18-20 minutes.
TIP: Dust blueberries with a little flour to help prevent blue-bleed.

Dear Average Betty,
These look awesome am going to definitely try! Thought I might be bum about making scone again since last was epic fail (but it was a premixed pkg from cost plus) all i had to do was add water…think i added too much or I don’t know what happened. Sloppy mess! :(
