These BBQ Chicken Pizzas are a slam dunk for your next party!
Ingredients for Pizza Topping:
1 1/2 cups chopped chicken (grilled, baked or otherwise cooked)
1 1/2 cups chopped red onion (grilled, caramelized)
1/2 cup marinara sauce
1/3 cup barbecue sauce
1 1/2 cups shredded cheeses (equal parts Monterey jack, Cheddar and Parmesan)
6 pieces flat bread for crust (or pita bread)
NOTE: Betty loves Trader Joe’s, Arabian Joe’s Middle Eastern Flat Bread for this recipe… but any flatbread or pita bread will work.

Garnish for Barbecue Chicken Pizza:
1 avocado sliced into 24 slices
2 chopped green onions (also know as spring onion)
Let’s score some pizza points!
Saute red onion in a small amount of olive oil (or place on the grill). Season with a crack of black pepper and few shakes of crushed red pepper (for some extra kick).
Sauteed seasoned onions will reduce to approximately 3/4 cup. Set aside.
In a bowl combine chopped chicken and sauteed red onion.
Add marinara sauce and bbq sauce.
Stir in shredded cheeses.
Stir all ingredients together. Set aside.
Pizza! Pizza!
Place flat bread top-side down on grill or top-side up under broiler. Toast the tops of flat bread before spreading chicken mixture on tops.
This ensures a crispier crusts ;)
Spread mixture on tops of flat bread and toss on the grill.
Grill over medium heat until crust is crispy and cheese has melted.
Slice into quarters.
Garnish with a sprinkling of chopped green onions and a slice of avocado. Makes 6 pizzas. Allow 2-3 pieces per person if serving as an appetizer. Allow one whole pizza if serving as a main course. Serve with grilled asparagus and a green salad for a complete game night meal.
