BBQ Chicken Quesadillas and Guacamole are great for beginning cooks!
Quesadillas can be switched up any number of ways (Pizzadilla, anyone?) and more importantly, they teach balance.
Too much cheese?
Too much BBQ Sauce?
You get a greasy, gooey mess and not a BBQ Chicken Quesadilla.

Ingredients for Guacamole:
1 large avocado
1 small green onion, finely chopped
1 serrano pepper, seeded and finely chopped
1 TBSP chopped cilantro
1 TBSP lime juice
salt & pepper
Ingredients for BBQ Chicken Quesadillas:
1 cup cooked shredded chicken
1 cup shredded jalapeno jack cheese
1 small green onion, finely chopped
1 serrano pepper, seeded and finely chopped
1 TBSP chopped cilantro
1/2 cup bbq sauce
3-4 8-10″ flour tortillas

Directions for Guacamole:
1) Mash avocado and season with salt and pepper.
2) Add lime juice and combine well.
3) Stir in cilantro, green onion and serrano pepper, if desired.
4) Keep covered and chilled until ready to use.
Directions for BBQ Chicken Quesadillas
1) In a large bowl combine chicken, serrano pepper, cilantro and green onion.
2) Add bbq sauce and stir.
3) Add cheese and combine well.
4) Heat a small amount of oil in a heavy skillet over medium heat.
5) Place a tortilla in the skillet and spread some of the chicken mixture on half of the tortilla.
6) Fold the tortilla over and cook on both sides until golden on the outside and the cheese is melted on the inside.
7) Cut into pieces and serve piping hot with guacamole and hot sauce.
