Sweet vanilla and fresh California Avocado shine through in these fluffy cupcakes.
Based on my award winning Vanilla Cupcakes Recipe, Avocado Cupcakes have less saturated fat and cholesterol.
Ingredients for Avocado Cupcakes:
1 medium California Avocado (about 1/2 cup mashed)
2 TBSP butter
1/2 cup white granulated sugar
1/2 cup light brown sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 large egg
1 1/2 cups flour
2 teaspoons vanilla
3/4 cup buttermilk
Ingredients for Avocado Frosting:
1 medium California Avocado (about 1/2 cup mashed)
3 cups confectioners’ sugar
2 TBSP butter
1 teaspoon vanilla
pinch coarse salt
NOTES:

Directions for Avocado Cupcakes:
1) Preheat oven to 350(F).
2) In an electric mixer, cream avocado and butter thoroughly. Add white and brown sugars and cream again.
3) Mix in baking powder, baking soda and salt.
4) Add the egg and vanilla and cream thoroughly.
5) Add flour and mix slowly, just until combined. Scrape down sides of mixing bowl as needed.
6) With mixer running on low speed, stream buttermilk into mixing bowl.
7) Spoon batter into paper lined pan and bake in preheated 350(F) oven for about 20 minutes.
8) Cupcakes will be golden and puffed. Allow cupcakes to cool in the pan for about ten minutes, until they can be handled without crumbling or dimpling.
Directions for Avocado Frosting:
1) In an electric mixer cream California Avocado and butter.
2) Add salt and vanilla.
3) Gradually add powdered sugar and cream well.

I made these an hour ago & boy was my boys (husband & son) were VERY impressed! A friend gave me a SHHH…load of avocados & I was wondering what I was going to do with them! I made donuts which was a BUST! Elly-Mae …”ain’t got nothing on me”! They were FLAT, tasteful but after about 5 minutes were HARD as ROCKS! After searching I ran across this & I am so glad I didn’t see any other posts. Follow recipe as directed, I made NO changes , none are needed PLUS, they are NOT too sweet! Thank you for this great recipe!
