It’s the big question that millions of people face every day of the workweek: “So… what’s for lunch today?” Well, Business Betty is no exception, and she too joins the debate to determine which place will provide that quick and convenient meal on her lunchbreak. But sometimes Betty just doesn’t feel like the same heavy lunch options that knock her out like an elephant tranquilizer, and she dreams of a new option that’s light and flavorful.
Mmm… light and flavorful… like a Chicken Curry Pita! But where does a Betty go for that? Maybe Betty should open her own restaurant to serve up a light and flavorful lunch menu? Yeah, then she could finally stick it to The Man and quit her lousy job! It sounds great, but will Betty be able to stomach employees like Emo Betty whose people skills need a bit of fine-tuning? BIGTIME BETTY NEWS! Betty’s coming to a Sprint/Nextel mobile phone near you! Yes, it’s true! Betty has signed a deal with the rockin’ folks at BlipTV.com to distribute Betty vids on a handful of wireless carriers, including Sprint/Nextel, AT&T and Alltell! It won’t be free, but starting at only $.99 per download hopefully it’s the last time Betty’s referred to as “cheap.”
Last week, Sunny Gault and the awesome guys from Viral took a road trip to Hollywood to cover the Prom Queen wrap party… and they stopped by Betty’s pad beforehand to film a little behind-the-scenes action of Average Betty! It was a fun day of food and laughs with Sunny, Dave, Josh and Kevin! Look for Betty in an upcoming episode of Viral sometime in June. Thanks, Viral! Betty loves you! Muwaaah!
COOL VIEWER SHOUT-OUTS! Betty thanks all of the super cool people that vote, comment and write to give feedback and keep in touch! Most recently, Betty heard from Melissa S of Houston, Texas, who battled The Fried Rice Demon and WON! Way to go Melissa! Betty also got word from Carrie R of Sacramento, California, who made The Perfect Shrimp???, “a recipe that was easy to throw together [and] tasted great.” Thanks, Carrie… now I just need to make a hot tub-friendly version of The Perfect Shrimp! Roger S, also from the Golden State, “loved the Mac Daddy n Cheese video,” and thinks Betty will “inspire many to start cooking more meals at home.” Let’s hope so, Roger… that’s what Average Betty is all about! Ok Betty- Here’s that Quinoa recipe I told you about. I love it.
Ingredients:
2 C. quinoa
3/4 C. sun dried tomatoes diced
1 C. greated hard cheese (I like the blended type)
1/2 C. bell pepper diced
1/2 C. onion diced
2 or 3 cloves of garlic diced
1 Tbl. Sp. Italian spices (I like the Italian essence from the “BAM” guy
1 Tbl. Sp. fennel seed
Cook quinoa according to package directions. Dice veggies while this is happening. Saute’ onions pepers and garlic together. As soon as quinoa is cooked add tomatoes fennel seed and Italian spices, stir, cover and let simmer for a bit to soften tomatoes. Add peppers onions and garlic and stir again. top with greated cheese and stir once more until mixture starts to get “sticky”. Pepper to taste. Serve as a vegitarian main dish, or along side a pork chop or sausage from the grill.
Variation: for a nice one pot dish add 1 lb. Italian sausage (omit fennel seed if it’s in the sausage). Remove casings and brown in a sauce pan, breaking into small pieces. Add to the pot with the peppers and onions. Either way, I’ll bet you like it.
