Mary may have had a Little Lamb, but Betty had a gigantic Lamb Burger! Betty’s latest adventure takes her to Nob Hill in San Francisco to meet award-winning Executive Chef Gloria Ciccarone-Nehls of Big 4 Restaurant at the Huntington Hotel. Chef Gloria gives Betty an exclusive demonstration of her Moroccan Spiced Lamb Burger, served with Roasted Beet Relish, Mint Riata and Harissa Fries right in the Big 4 Restaurant kitchen! Betty also sits down at the piano with Big 4 Lounge pianist, Michael Parsons, and gets up-close-and-personal with dinner waiter, Ron Henggeler. How does Michael handle requests for hip-hop? Chef Gloria became the first female hotel executive chef in the Country when she went to work at The Huntington nearly thirty years ago. Renowned for her annual Wild Game Week, she offers specialties ranging from piranha and antelope to yak and elk.
Trained by the Culinary Institute, Ciccarone-Nehls comes from a family of chefs. She has cooked for everyone from Julia Child to Cary Grant. In fact, Grant would only dine if Chef Gloria was in the kitchen; if she wasn’t, Chef would be summoned from home and would bike to the Big 4 specifically to cook for Grant. And that’s no surprise to Betty — Chef Gloria is full of spark, wit and unrelenting joy. Her recipes are creative, elegant and time-tested. The feeling of family in the kitchen is contagious (her Sous Chef, Carlos Loeza, has been with her for over 20 years) and you can taste the love in everything from the Chicken Pot Pie to the Buffalo Rib Eye. I heard from Chef Gloria and she is going to provide the recipe for her awesome Lamb Burger. Right now, the famed Wild Game Week is going on at the Big 4 and she is swamped! Also, she said her recipe, in its current state, will make 100 Lamb Burgers. She needs to scale it down for home use…
