As you may know, Anthony Bourdain and Average Betty go way back. Well, Bourdain is being honored with a Lifetime Achievement Award at the 2010 Tasty Awards. No doubt he deserves one. The man has eaten things in his lifetime most of us will never encounter, much less dine upon. Average Betty has also been nominated for two Tasty Awards and I need your vote! ANTHONY BOURDAIN ON OMELETTES

ChubbyHubby asked Anthony Bourdain, “What’s your favorite super-fast foolproof recipe that can be whipped together quickly and easily but that always impresses people?” Bourdain replied, “A proper omelette. Because it’s amazing how few people can make a damn omelette.” More recently, GourmetGirl furthered the omelette sentiments of Bourdain on her twitter, “It’s not a recipe, it’s technique.” I am the first to agree with Bourdain that an omelette isn’t a recipe. I don’t know if I consider an omelette a technique or simply a vehicle for leftovers. You shouldn’t have to run out to the market to make an omelette. Just look in the fridge and work with whatcha got. No doubt, my omelette technique could use improvement. But if Anthony Bourdain came to my house for breakfast… I’d make him Eggs Benedict… or Waffles, anyway. What would you serve if Anthony Bourdain appeared at your doorstep ready for breakfast?     Here ya’ go: (The pic on my Twitter page is this.)

    4 tablespoons extra-virgin olive oil
    3 garlic cloves, minced well
    1 28-ounce can whole tomatoes ( I prefer San Marazanos)
    3-4 sprigs fresh thyme
    Salt and freshly ground pepper
    8 large eggs
    4 tablespoons freshly grated Parmigiano-Reggiano cheese (Shredded Asiago works well, too.)

    Heat the oil in a large saute pan over medium high heat. Add the garlic and saute until fragrant, 1 minute. Add the tomatoes and their juices. Break up the tomatoes with a wooden spoon. (Pull any large veins and thick tops out) Add the thyme and simmer for 15 minutes. Transfer the mixture to a blender or use immersion stick and puree. Season with salt and pepper. Preheat the oven to 400°F. Set 4 shallow ovenproof bowls on a baking sheet. Pour the pureed sauce into the bowls. Crack 2 eggs into each bowl and season eggs with salt and pepper. Sprinkle the cheese over the eggs and bake the eggs for about 8-10 minutes, until the whites are just set.

    I wouldn’t serve Bourdain anything…I’d make him cook, that opportunity wouldn’t come often. :)

    I love Anthony Bourdain!! To have his job, sigh!
    I would make him a brioche french toast dipped in a gran marnier batter. Maybe some rosemary/garlic potatoes on the side.

    Good smokey bacon with a nice balance of saltiness, cooked to crisp and crumbled, with some minced red onion, tomato and a little diced pepper, and some really good sharp cheddar. Simple, but good.
