Ingredients for Chickpea Salad Sandwich:
1 15 ounce can chickpeas
1 small avocado
1/4 cup diced celery
1 1/2 TBSP Dijon mustard
1 TBSP fresh lemon juice
salt and pepper to taste
NOTES: Makes about 2 cups Chickpea Salad or 3-4 sandwiches. Serve with fresh gluten free bread and crunchy vegetables. Leftovers can be stored refrigerated, in an airtight container, for 2-3 days.
Directions for Chickpea Salad:
1) In a medium bowl mash avocado, slowly mix in the garbanzo beans (and liquid).
2) Mash garbanzo beans with the avocado and add Dijon mustard.
3) Mix in lemon juice and celery.
4) Season to taste with salt and pepper.
This Chickpea Salad is high in protein, free of cholesterol, low in sodium, gluten free and vegan.
To enjoy as a gluten free sandwich, be sure to serve on gluten free bread.
