My (2ND) Favorite (Everyday) Vegetarian Sandwich might become yours too.
I know, wheat bread slathered with mayo and stuffed full of crisp cucumber, buttery avocado, piled high with lettuce and tomato doesn’t sound like much.
But give me a chance.
What I call My Favorite Everyday Vegetarian Sandwich is refreshing and satisfying and it won’t weigh you down. Especially if you eat just a half like I usually do.
You have to try this sandwich.

Ingredients for My Favorite Everyday Vegetarian Sandwich:
2 slices wheat bread
1 TBSP mayonnaise
9 slices cucumber
1/2 medium avocado, sliced
sliced tomato & crisp lettuce
salt & pepper

Directions for My Favorite Everyday Vegetarian Sandwich:
1) Generously spread mayonnaise on bread.
2) On one slice (or side if making a half) pile cucumber, avocado, tomato and lettuce.
3) Top with other slice or side of bread and enjoy.
