Ingredients for Jalapeno Popper Dip:
1/2 cup diced fresh jalapeno (1-2 whole)
16 oz cream cheese (2 – 8 ounce packages, softened)
1 teaspoon lime zest
2 teaspoons lime juice
4 oz can fire roasted green chilies
4 oz can fire roasted jalapenos
1 cup mayonnaise
1/4 cup shredded Pecorino Romano
1/4 cup shredded Sharp Cheddar
1/2 teaspoon coarse salt (optional)
For the Crunchy Topper:
3/4 cup panko breadcrumbs
1 TBSP olive oil
1/4 cup shredded Pecorino Romano
1/4 cup shredded Sharp Cheddar
Directions for Jalapeno Popper Dip:
1) In a bowl combine diced, fresh jalapeno and cream cheese.
2) Add lime zest and juice.
3) Stir in fire roasted green chilies and jalapenos and combine well.
4) Add 1/4 cup each Pecorino Romano and Sharp Cheddar and combine well.
5) Stir in mayonnaise and set aside.
6) Make the crunchy topper. Combine panko and olive oil and toss to coat.
7) Add 1/4 cup each Pecorino Romano and Sharp Cheddar and combine well. Set aside.
8) In a 1-2 quart baking dish spoon cream cheese mixture and spread to flatten and fill dish.
9) Top with panko mixture.
10) Bake in a preheated 350(F) oven for 20-30 minutes, until bubbling hot and browned on top.
