Cowboy Caviar is sometimes called Texas Caviar or Poor Man’s Caviar.
Sometimes it’s made with black eye peas, sometimes with black beans.
But as far as I know… it’s never actually made with caviar.
The original Texas Caviar Recipe was created in 1940 by Helen Corbitt, at the Neiman Marcus Zodiac Room in Dallas, Texas. Not as steeped in urban legend as the $250 Neiman Marcus Cookie Recipe, but a good staple recipe to have in your wheel house.

Ingredients for Cowboy Caviar:
1 can whole kernel corn (12 oz, drained)
1 can black beans (12-15 oz, drained)
1/2 cup chopped tomatoes
1 jalapeno, seeded and diced
1/3 cup sweet peppers, seeded and diced
1/3 cup chopped green onion
1/3 cup chopped cilantro
1 cup diced avocado
juice of 2 limes (to taste)
1/2 teaspoon cumin
1/2 teaspoon chili powder
1/2 cup roasted pumpkin seeds
1/2 cup crumbled queso fresco, cotija, or similar
salt & pepper to taste
1 bag tortilla chips (for serving)
Directions for Cowboy Caviar:
Combine all ingredients and serve with tortilla chips.
