I don’t really need an excuse to celebrate Grilled Cheese, but as long as there is a food holiday to blame, why not?
April is Grilled Cheese Month and April 12th is Grilled Cheese Day. Seriously. An entire Month and a whole Day devoted to all things toasted and cheese.
Trust me, I’m not complaining. I’m simply sharing the joyous news!

I don’t have a favorite it’s more what I in the mood for. Let’s see as of right now this is how I would build it.
Homemade white bread (two slices per sandwich is a must).
Put one slice of American cheese on a piece of bread, add a dab of butter(important!) then top again with American cheese and finally the other piece of bread.
In a heated skillet with lots of butter already melted add your sandwiches. While they are cooking top the sandwiches with butter.
Once toasted to your liking flip then and again cook until toasted.
I then cut them into triangles and dip them into a bowel of tomato soup with fresh ground pepper.

My go-to grilled cheese uses Sourdough bread, English Double Gloucester cheese, and a slice of Vidalia onion (place between the slices of cheese prior to grilling).

Don’t freak out. I learned this trick when I needed to make 10 sandwiches at a time, and it is amazing! Bake them in the oven on a sheet pan. Seriously!
For each sandwich you need 2 slices of bread, cheese and softened butter. Preheat oven to 400 degrees. Spread butter on half of the bread so it is thicker on the edges and thinner in the center and lay on the sheet tray butter side down. Cover with the cheese (and anything else you can think of), and top with buttered bread – again thicker butter on the edges. Toss in the oven for 3-5 minutes or until golden on the bottom. Flip them over and cook again 3-5 minutes until golden and cheese is melted.
I know it sounds like a sacrilege, but these are actually better than grilled or pan fried. They are so good that I make all of mine this way now, even if I am only making one or two! Enjoy!
