Mashed Potato Mayhem Don’t call the food police, just accept it. Mashed Potatoes taste great baked on top of pizza. The potatoes get creamier, the crust gets crispier and Mashed Potatoes transform an ordinary pizza into something to talk about. Something to crave. Ingredients for Mushroom & Ham Mashed Potato Pizza:
Mushrooms (sliced, marinated in balsamic vinegar)
Red onion, sliced
Red bell pepper, sliced
Ingredients for Huevos Rancheros Mashed Potato Pizza:
Bacon (or shredded carnitas or carne asada)
Pepper Jack Cheese
Notes: If you are particular about your eggs, you can cook (fry, poach, scramble) the egg separately. For individual pizzas as seen in the video, use about 3.5 ounces of dough for each pizza. Watch the How to Make Mashed Potato Pizza Video for added instruction and entertainment.
1) Roll out pizza dough and poke with a fork.
2) Spread a layer of mashed potatoes on pizza dough.
3) Continue to top as desired, leaving a “divet” in the toppings for the egg.
4) Bake in a preheated 500(F) oven for 8 minutes, or until crust is crisp and egg is cooked to your liking.
5) Share and enjoy.
