Mac Daddy n’ Cheese (recipe)

Not only is Mac Daddy n’ Cheese mad creamy good and the ultimate comfort food, but it’s great as a meal or side dish. The only thing that Mac Daddy n’ Cheese can’t help you with is your low-fat, low-carb diet.

Ingredients for Mac Daddy n’ Cheese:
mac_ingredients
3 cups uncooked large elbow macaroni noodles
1 1/2 cups shredded medium cheddar cheese
1 cup Monterey Jack cheese
3/4 cup shredded Parmesan cheese
1 1/4 cups milk
2 tbsp butter
1 1/2 tbsp olive oil
2 tbsp. flour

Go crazy… try different cheeses that please your taste!

mac_cheddar
Shred Cheddar Cheese.
mac_monterey
Shred Monterey Jack
mac_parmesan_shred
Shred Parmesan cheese.

mac_boil
Boil macaroni noodles until tender.

mac_rinse
Rinse cooked noodles with cold water. Set aside.

mac_meltbutoli
In a heavy skillet, melt butter and olive oil over medium heat.

mac_flour
Add flour to make a roux*.

Etymology: French, from beurre roux brown butter
1. a cooked mixture of flour and fat used as a thickening agent in a soup or a sauce

mac_roux
Lower temperature to medium-low and stir mixture continuously until golden, nutty and smooth. Be careful not to scorch.

mac_whitesauce
Add milk slowly while stirring.

mac_addcheese
Add 1 cup shredded cheddar and keep stirring. Do not allow to boil or your cheese sauce will “break.”

mac_addcheese2
Add 3/4 cup shredded Monterey Jack cheese and keep stirring.

mac_chsauce
Sauce will be thickened and smooth.

mac_addmac
Turn off the heat on the stove, and turn on your broiler.
Add cooked macaroni noodles and fold to cover noodles with cheese sauce.

mac_parmesan
Incorporate 1/2 cup shredded Parmesan cheese into cheese sauce coated noodles.

mac_cheesetop
Top with remaining shredded cheese.

mac_broiled
Broil until top is golden brown and crispy. Don’t wanna? Don’t do it… it’s done!

Serve as a comforting main course with a side of steamed vegetables or salad. Or, serve as a side-dish that’s sure to steal the show! This recipe makes a boatload of Mac Daddy n’ Cheese, but that’s how Betty rolls. When served as a main course, this will feed 4-6; when served as a side dish, 8-12. If it’s not all eaten, it makes great leftovers! Don’t even think about asking Betty if this is healthy, yo!

    Hi Betty. I love your vids and subscribe through YouTube. Quick question…What is the name of the music playing at the end of your Mac Daddy and cheese video? I’m a big Funkadelic fan and it sounds like one of their songs. Help if you can. Keep up the excellent work.
