Fettuccine Alfredo Recipe

Fettuccine Alfredo
Classic Fettuccine Alfredo is easy, creamy, delicious comfort food. Rich Parmesan and silky ricotta combine to thicken this garlicky sauce that is simple enough for a weeknight and fancy enough for a romantic dinner at home.

Ingredients for Fettuccine Alfredo:
2 tbsp. butter
1 tbsp. olive oil
1 tbsp. flour
1 tbsp. garlic (2-3 cloves)
1 1/4 -1 1/2 cups milk (or half-n-half)
1 1/4 -1 1/2 cups finely shredded Parmesan
1/3 cup part skim ricotta cheese

Optional Ingredients for Fettuccine Alfredo:
parsley (fresh or dried)
grilled chicken, shrimp, sausage
fresh black pepper

Directions:
In a saucepan over medium heat combine 1 tablespoon butter and 1 tablespoon olive oil.
Add 1 tablespoon flour to make a roux. Cook flour until light golden in color.
Gradually add milk (or half-n-half) to roux while stirring continuously.
Mixture will not be that thick. Don’t worry.

Lower heat to medium-low and stir in 1 cup Parmesan cheese.
Mixture will begin to thicken and bubble. Do not allow to boil.
Stir in minced garlic allow to cook a few minutes more.
Add ricotta cheese and incorporate. Mixture will be thickened.

Give a taste and adjust seasonings and consistency. Add more milk/half-n-half and Parmesan cheese as needed. For extra richness, stir in 1 tablespoon butter just before serving.

Serve over cooked Fettuccine noodles. Dress it up with a crack of black pepper, a sprinkling of parsley and grilled chicken if desired. Makes 1 1/2 cups Alfredo sauce. Served over noodles, makes 4 side dish servings or 2-3 entree servings.

    Hi Donna,

    Thanks for stopping by! Great question.

    Half and half is a dairy product made made of a equal-parts cream and whole milk.

    It’s commonly used in coffee and you can also use it to make ice cream (as well as Fettuccine Alfredo). Apparently, it’s also known as half cream in the United Kingdom.

    Half and Half is Creamo in Canada.

    This is the first “grown-up” (not out of a box or can) recipe my step-daughter learned to make. We both love the podcast. I’m impressed you are able to inspire a sullen preteen to actually try something domestic.

    Excellent! Thanks for the tip on Creamo. That’s a lot more fun to say than Half n Half… I just might have to start calling it that myself.

    How fun that your step-daughter wanted to try this recipe! I’d say it’s a pretty grown-up recipe for a preteen. Good for her!

    You could definitely add bacon to this dish! It’s really quite tasty :)
    I have used chicken in this recipe and using shrimp is quite popular… I imagine fish might be good too!

    Love all the experimenting you do!

    I do need to do some more pasta recipes… here is one of my favorites for an Asian style “Beefy Noodle”:
