Fake Caesar Salad Dressing Recipe

This Fake Caesar Salad Dressing is BOTH a secret recipe and a stolen recipe. And while a scandalous story always adds to appeal, because this recipe requires no raw or coddled egg and no anchovies, it’s a great knock-off to have in your repertoire.

Fake Caesar Salad Dressing Recipe

Ingredients for Fake Caesar Salad Dressing:
1/4 cup rice vinegar
3/4 cup extra virgin olive oil
3 TBSP dijon mustard
2 cloves garlic, microplaned
1/8 teaspoon dried thyme
pinch salt

NOTES:
Makes about 1 cup of dressing. The classic ratio for vinaigrette is 3 parts oil to one part vinegar; adjust oil and vinegar levels to suite your taste. The original recipe calls for red wine vinegar, I prefer both the taste and color that rice wine produces. Store in a sealed container, up to a week, in the refrigerator.

DIRECTIONS:
Combine all ingredients in a jar and shake well.

Fake Caesar Salad Dressing Recipe
EXTREME CRUNCH CROUTONS:
1) Preheat oven to 350(F).
2) Cut bread of your choice into bite-sized pieces.
3) Place bread pieces into a bowl and drizzle with a small amount of olive oil. Toss to lightly coat.
4) Season bread pieces with salt and other herbs, seasonings and grated cheese of your choice.
5) Place into preheated oven, in a single layer, on a baking sheet, and bake for about 20 minutes, until golden in color and extremely crunchy.
