Ingredients for Coffee Cake:

1/2 cup butter
3/4 cup light brown sugar
1 1/2 cups unbleached, all-purpose flour
3/4 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
2 large eggs
1 tsp. pure vanilla extract
1 cup light sour cream
Ingredients for Crumb Topping:

1/2 cup sugar
1/2 cup flour
1 tsp. cinnamon
1/4 tsp. nutmeg
1/4 cup melted butter
1 cup chopped walnuts

Get ready for some ultra cool coffee cake action!

Preheat oven to 350(F).
With an electric mixer, cream butter and brown sugar.

Add baking powder, baking soda and salt.

Scrape down sides of bowl.

Add eggs.

Add vanilla.

Add flour.

Fold in sour cream.

Lightly spray a non-stick bundt pan (or any 9″-10″ pan) with canola oil.
If you are not using a non-stick pan, grease the pan thoroughly and dust with flour.

Spoon batter into pan.

Smooth out batter in pan. Set aside.
Topper off?

In a bowl combine chopped walnuts, flour, sugar, cinnamon and nutmeg.

Stir ingredients together.

Add melted butter and combine.

Sprinkle mixture on top of batter.

Bake for 35-40 minutes.
Allow to cool for 15 minutes before removing from pan.

If using the bundt pan, cut all around the edges and lift center from outer ring.

Then cut all around the bottom of the pan, separating the cake from pan.
Cut cake ring in two halves and reposition in ring on serving plate.

Fill center hole with cut strawberries for some serious Wows! If using a 9″ square pan, consider cutting into equal sized squares and building a pyramid! Presentation is the key to cool, baby!

WOW!!!! This is moist and very very very good.. my family loved them. I made them in a cupcake pan’s intending for these to be frozen to use in lunches during the week , I Could not find my cupcake papers so i just sprayed the pan with a cooking oil and filled 12 cupcake tins 3/4 full and topped each with topping. Looked like a lot of topping but it fit easily on the tops of the cupcakes. Then baked for 20 minutes at the 350 degrees. And WOW what came out was wonderful. Needless to say not one of them made it to the freezer. It seems everyone in my house sleep walks when something this good was inocently waiting in the kitchen for them.. to my supprise they were all gone in the morning.. this recipe is a keeper… thanks so much… lynn

Hi lynn! WOW!!! Thank you! I am so glad you and your family loved the coffee cake and I really love that you made them into muffins and shared how you did it! What a great idea!!! I am definitely going to try it that way.
I am in Hawaii right now sipping some Kona coffee and I must say, a piece of coffee cake would be simply splendid right now
Thanks for the awesome comment… hope your holidays are off to a great start!
Cheers,
Betty

Hi juliana!
I know! It’s so weird that it’s called “coffee cake” and there is no coffee in it! I think people call it coffee cake because you typically eat it with coffee…
I’ve heard of a chocolate cake that has coffee in it… I should give that one a try. Thanks for the suggestion
Cheers,
Betty

Is it possible to turn this coffee cake, or any coffee cake into a 3 tier wedding cake? Any usefull tips on preventing it from crumbling apart due to the weight of the other cakes, and cake topper? I would love to actually eat a wedding cake at our upcoming Feb.14th wedding that we both really love!
10. Average Betty | September 6th, 2009 at 11:37 am
Hi Melissa!
Congratulations on your upcoming wedding! I have a friend that makes wedding cakes, not professionally, but for friends and family. I bet she knows a few tips and tricks… I’ll ask her for some advice
Cheers,
Betty
