Per six caramels, add 1/2 teaspoon half n’ half or milk.

Peanut Butter Cookies
Microwave about 30 seconds until caramel has melted. Remove from microwave immediately and stir with a fork.

Peanut Butter Cookies
Working quickly, drizzle caramel over cookies. If caramel becomes hard, add a few drops more milk or half n’ half and microwave 10 seconds more.

To Top with Chocolate…

Peanut Butter Cookies
Combine approximately 1/2 tablespoon butter per 1/3 cup chocolate pieces in a microwave safe bowl.
Microwave 20 seconds, stir and microwave 10-20 seconds more until melted and shiny.

Peanut Butter Cookies
Spoon chocolate into a plastic bag and snip off the tip of the bag to make a piping bag.

Peanut Butter Cookies
Pipe chocolate onto cookies. Makes 3-4 dozen mini-cookies. Store in airtight container. (Like you’ll have leftovers!)

I’m thinkin’ that this may violate your newly established “peanut-free zone”?

    HoneyB,
Thank you! I have to say, melting the caramel is the toughest part of the recipe and therefore the most sinful ;)

    Argus!
Yes, severe violation of “Peanut Free Zones” thus the WARNING :)

Hi Happy Cook! Thank you :) I just finished up the rest of my dough and gave ‘em to some friends… the best part about cookies is sharing them with friends… wish I could send a few to you right now. But, if you give them a try - I’m betting you’ll be just a little bit happier! Send me some pictures if you try them and I’ll put them on the homepage! Cheers, Betty

These are so AWESOME ! I really love a good PB cookie.

I made some variations to the toppings that I’d like to share with you and the others.

I spread about a teaspoon of Kraft Philly Cheesecake spread on a batch, WOW ! This is in the little tub, it’s new and awesome.

I also made a Hazelnut cream spread and it’s out of this world.

    Cheers

    Hi

These look lovely can you add milk to the cookie mix.

    Thanks

    Holly UK

  • 18. Average Betty  |  January 15th, 2009 at 8:35 am

    Hi Holly!

Gosh, great question! I’ve never tried adding milk to this recipe… and I fear the dough may be a little too loose if milk was added, but you could start with a tablespoon of milk if you wanted to give it a try.
My goal with this recipe was to make a moist, chewy cookie that is not at all dry. I think you’ll be surprised how chewy and not crumble-y they are!
I do think a tall glass of milk to accompany these cookies is almost mandatory ;)
    Hope this helps…
Let me know how they come out for you.

    Cheers,
    Betty

  • 19. Holly Webster  |  January 16th, 2009 at 4:25 am

    Hi Betty,

I tried adding a little bit of milk to mixture and they turned out lovely.

I was thinking next I might add some chicken stock so it will give the cookie a deep flavour.

How do you think they would turn out?

    Thanks for your help again

    Holly

  • 20. Average Betty  |  January 16th, 2009 at 9:43 am

Thanks for letting me know about the milk! So glad the cookies turned out well.

When I first read “chicken stock” I thought, “Huh?!?!” But the more I thought about it, it’s the savory-sweet thing. Like maple bacon or chocolate covered pretzels.

I’ve never tried it, but I’m all for your experiments! They are great! I’m really eager to know if you try it and how it turns out.

    Cheers,
    Betty

  • 21. kathryn mitchell  |  January 22nd, 2009 at 6:27 am

is betty crocker peanut butter cookie mix safe to use.
just wanted to make sure with all the news about peanut
    butter.

  • 22. Average Betty  |  January 22nd, 2009 at 7:56 am

    Hi kathryn,

Of course I am not an authority on the peanut butter recall and I have no affiliation with Betty Crocker in any way.

I did go to the FDA website that has the official list of what has been recalled and there is a search box where you can search for specific brands. Here is a link:

    http://www.accessdata.fda.gov/scripts/peanutbutterrecall/index.cfm

You may have arrived here because of the “warning” in the title of my recipe. My “warning” is intended to be a humorous poke at peanut allergies and has nothing to do with the peanut butter recall.

    Hope this helps!
    Cheers,

  • 23. maggie  |  February 9th, 2009 at 6:21 pm

I’m hoping to see a reply from the chicken stock lady. Is she serious? If she is, is this ‘the big secret’ to make your baking go from ‘lovely’ to ‘amazing’ cookies.

Betty will you try it if we don’t hear back?

love this site, just found it
    cheers,
    Maggie

  • 24. Average Betty  |  February 10th, 2009 at 1:45 pm

    Hi Maggie,
I know… the chicken stock… might be crazy, might be crazy good!
So glad you found the site :) Will you still love me if I don’t try the chicken stock? LOL!
    Cheers,
    Betty

  • 27. Average Betty  |  May 19th, 2009 at 9:28 am

    Hi samantha!
Thank you! These peanut butter cookies are pretty darn good :) My nieces and nephews love them!
My inspiration for these was a Pay Day candy bar, if you can believe that. I wanted them to be soft, most and chewy and really peanut-buttery!

  • 28. rachel-asouthernfairytale  |  May 25th, 2009 at 4:07 pm

Yum! Betty, these look delicious. Such fun and creativity ;-)
