UPDATE: The very awesome AC from Italy sent along the following metric conversions for this recipe, “Hope it helps the other fellow grams users that love your site as much as I do.” Thanks, AC! It is a huge help to me – and I’m sure it will be for others!
76 g butter
73 g brown sugar
67 g white sugar
1.5 g baking soda
pinch of salt
1 vial vanilla essence or 2.5 ml
1 large egg
86 g peanut butter
85 g flour
WARNING! MAY CONTAIN PEANUTS!
In an electric mixer cream butter, sugar and brown sugar.
Add baking soda, salt and vanilla.
Add egg.
Beat until smooth.
Add peanut butter.
Beat until smooth.
Slowly mix in flour.
Beat dough till fluffed.
Spoon dough into container with tight fitting lid and allow to chill thoroughly in the refrigerator before forming into cookies.
When you are ready to make the magic…
Preheat oven to 300 (F). Chop peanuts. The smaller you chop the peanuts the better they will adhere to the cookies.
Chop chocolate pieces.
Spoon chilled dough onto cookie sheet. Betty likes to use a teaspoon (yes, teaspoon) to ensure the cookies are nice and small. To ensure they are nice and round, roll into a ball before adding toppings or pressing.
Press chopped peanuts into some.
Press chocolate pieces into others.
Press chocolate pieces and peanuts into others.
Leave some plain.
Make classic hatch marks by pressing a (slightyly wet) fork one way…
and then the other.
Bake in preheated 300(F) oven for 11-12 minutes.
Allow to cool slightly before removing from tray.
To Top with Caramel…
Unwrap caramel candies and place in a microwave safe bowl.
Per six caramels, add 1/2 teaspoon half n’ half or milk.
Microwave about 30 seconds until caramel has melted. Remove from microwave immediately and stir with a fork.
Working quickly, drizzle caramel over cookies. If caramel becomes hard, add a few drops more milk or half n’ half and microwave 10 seconds more.
To Top with Chocolate…
Combine approximately 1/2 tablespoon butter per 1/3 cup chocolate pieces in a microwave safe bowl.
Microwave 20 seconds, stir and microwave 10-20 seconds more until melted and shiny.
Spoon chocolate into a plastic bag and snip off the tip of the bag to make a piping bag.
Pipe chocolate onto cookies. Makes 3-4 dozen mini-cookies. Store in airtight container. (Like you’ll have leftovers!)

The_Argus says
I’m thinkin’ that this may violate your newly established “peanut-free zone”?
megan says
your photos and step-by-step recipe are wonderful! i’m so glad i stumbled upon this :)
Average Betty says
HoneyB,
Thank you! I have to say, melting the caramel is the toughest part of the recipe and therefore the most sinful ;)
Hi VeggieWedgie,
Sorry… I’ll try to stop… but it’s so much FUN! Thanks for dropping by!
Argus!
Yes, severe violation of “Peanut Free Zones” thus the WARNING :)
megan,
I am so glad you stumbled upon my lil’ corner of the interweb! Hope you give the cookies a try, they are easy and stay nice and chewy for days… if they last that long!

Hi Happy Cook! Thank you :) I just finished up the rest of my dough and gave ’em to some friends… the best part about cookies is sharing them with friends… wish I could send a few to you right now. But, if you give them a try – I’m betting you’ll be just a little bit happier! Send me some pictures if you try them and I’ll put them on the homepage! Cheers, Betty

These are so AWESOME ! I really love a good PB cookie.
I made some variations to the toppings that I’d like to share with you and the others.
I spread about a teaspoon of Kraft Philly Cheesecake spread on a batch, WOW ! This is in the little tub, it’s new and awesome.
I also made a Hazelnut cream spread and it’s out of this world.
Cheers

Holly Webster says
Hi
These look lovely can you add milk to the cookie mix.
Thanks
Holly UK
Average Betty says
Hi Holly!
Gosh, great question! I’ve never tried adding milk to this recipe… and I fear the dough may be a little too loose if milk was added, but you could start with a tablespoon of milk if you wanted to give it a try.
My goal with this recipe was to make a moist, chewy cookie that is not at all dry. I think you’ll be surprised how chewy and not crumble-y they are!
I do think a tall glass of milk to accompany these cookies is almost mandatory ;)
Hope this helps…
Let me know how they come out for you.
Cheers,
Betty
Holly Webster says
Hi Betty,
I tried adding a little bit of milk to mixture and they turned out lovely.
I was thinking next I might add some chicken stock so it will give the cookie a deep flavour.
How do you think they would turn out?
Thanks for your help again
Holly
Average Betty says
Thanks for letting me know about the milk! So glad the cookies turned out well.
When I first read “chicken stock” I thought, “Huh?!?!” But the more I thought about it, it’s the savory-sweet thing. Like maple bacon or chocolate covered pretzels.
I’ve never tried it, but I’m all for your experiments! They are great! I’m really eager to know if you try it and how it turns out.
Cheers,
Betty
kathryn mitchell says
is betty crocker peanut butter cookie mix safe to use.
just wanted to make sure with all the news about peanut
butter.
Average Betty says
Hi kathryn,
Of course I am not an authority on the peanut butter recall and I have no affiliation with Betty Crocker in any way.
I did go to the FDA website that has the official list of what has been recalled and there is a search box where you can search for specific brands. Here is a link:
http://www.accessdata.fda.gov/scripts/peanutbutterrecall/index.cfm
You may have arrived here because of the “warning” in the title of my recipe. My “warning” is intended to be a humorous poke at peanut allergies and has nothing to do with the peanut butter recall.
Hope this helps!
Cheers,
Average Betty

I’m hoping to see a reply from the chicken stock lady. Is she serious? If she is, is this ‘the big secret’ to make your baking go from ‘lovely’ to ‘amazing’ cookies.
Betty will you try it if we don’t hear back?
love this site, just found it
cheers,
Maggie
Average Betty says
Hi Maggie,
I know… the chicken stock… might be crazy, might be crazy good!
So glad you found the site :) Will you still love me if I don’t try the chicken stock? LOL!
Cheers,
Betty

Hey! betty ure peanut butter cookies r off the chain!!! How do u come up with cool stuff like this???
Average Betty says
Hi samantha!
Thank you! These peanut butter cookies are pretty darn good :) My nieces and nephews love them!
My inspiration for these was a Pay Day candy bar, if you can believe that. I wanted them to be soft, most and chewy and really peanut-buttery!
rachel-asouthernfairytale says

I bought one after our breakfast this morning and just took a bite of it and thought “I bet I could make something that tastes a lot better than this!”. I’m definitely going to make these later this week and I can’t wait! Thanks for the awesome recipe :]
